  • 110 grams rice

Sauce

  • 50 grams semi sundried tomatoes
  • 1/2 Red Capscium
  • 6 sprigs parsley, To Taste
  • 5-10 leaves basil, To Taste
  • 1 clove garlic, To Taste
  • 1 Large Handful of Baby Spinach
  • 1/2 red onion
  • 1 tablespoon Vegetable Stock Concerntrate (EDC)
  • Salt & pepper to taste
  • 1-3 chilli's, Optional - To taste for Spicey Version

Recipe's preparation

    SUNDRIED TOMATO & HERB SAUCE
  1. Add 1 garlic clove and half a red onion to bowl (add 1-3 chilli's here if using)

    Chop speed 5 for 3 seconds.

    Add 50 Grams of Semi Sundried Tomatoes, 1/2 Red Capsicum, 6 Sprigs of Parsley (to taste) 5-10 Basil Leaves (to taste), 1 large handful of Baby Spinach, 1 Tablespoon of Vegetable Stock Concentrate and pepper to taste.

    Blend on speed 7 for 10 seconds or until desired consistency is reached.

     

    Set Sauce aside 

  2. STEAMED RICE
  3. Without washing the bowl add 1 litre of boiling water. Add 110 grams of rice to the basket and rinse well under cold running water.

     

    Add the basket to the bowl. 

  4. STEAMED FISH
  5. In the bottom tray of the Varoma add the fish and cover with reserved sauce.

  6. STEAMED VEGETABLES
  7. Place vegetables of choice in the top layer of the Varoma, leaving a hole in the centre of the veg the size of a 50 cent piece.

    Place Varoma lid on and cook for 15-25 minutes Varoma temp speed 2.5. Cooking times will vary depending on fish, rice and veg used.

     

    Serve and enjoy x

Tip

This recipe can be used with any fish rice and veg combo you can imagine. Use complimetry herbs to tweak for your taste. x

    Fish cooked nicely. Sauce was easy to make although had a smoky flavour which wasn't quite what we had hoped for. Thank you for the recipe.

    Just finished eating this and had to jump on and comment straight away. This if my first attempt at layered cooking so I was a bit nervous, but it came out beautifully, with two thumbs up from the MOTH!

    I love how to rice absorbs some of the seasoning and goes fluffy.

    I used frozen hoki fillets with the skin on and they were cooked nicely at 30mins, along with the frozen peas, beans and chopped sweet potato. 

    Will definitely be making this one again. Thanks for a healthy and easy layered meal!  Love

    Delicious!  We omotted the chilli & found the sauce/topping really tasty and think it would be great on prawns, pizza etc as well.  Love that it is an all in one dish tmrc_emoticons.)

    Nice and healthy. Added a whole red chilli to the sauce which made the dish hot and spicy. Will make again for a quick meal.
