Ingredients
Parmesan Mix
- 80 g parmesan, cubed
- 2 sprigs parsley
- zest of one lemon
Steaming
- 1000 g water, for steaming
- 250 g GF Pasta
- 500 g prawns, raw, peeled
- 1 tsp salt
Pesto
- 6 cloves garlic cloves skin left on
- 100 g rocket leaves
- handfull basil leaves
- Juice of one lemon
- 125 g EVOO (extra virgin olive oil), extra for roasting garlic

Without washing the bowl add water & salt Bring to boil in TMX bowl 8 mins, Varoma temp, speed 1.
Prepare Garlic Cloves and place into Oven.
Peel Prawns and add to both trays in Varoma.
Add Pasta to TMX bowl with Varoma in place, cook for 8 mins, Varoma temp, reverse, speed soft. Put pasta into a colander and wash under cold water, place with prawns into a large bowl and let cool.
Squeeze roasted garlic into TM bowl, add lemon juice, leaves and pulverise, 10 seconds speed 7, turn speed to 4 and gradually add oil pouring onto the lid to emulsify.
Add Dressing to Prawns & Pasta and fold through the Parmesan mixture. Serve with extra Rocket leaves. Season to taste.

Tip
This can be served either hot or cold adding extra rocket leaves.
