Ingredients

  • 1500 grams water
  • 500 grams Barramundi fillet, Skin ON
  • 2 sheets Baking paper
  • 1 fennel, Sliced
  • 1 orange, Sliced
  • 2 heaped tbsp fresh dill
  • salt, to taste
  • cracked pepper, to taste
  • 2 yellow squash, Halved
  • 1/2 zucchini, Thickly sliced
  • 6 asparagus spears
  • 60 grams Butter, Melted
  • 1 clove galic, crushed
  • 1 dash lemon juice

Recipe's preparation

  1. Fill bowl with water, add a few slices of fennel and two silces of orange. 10 minutes/veroma temp/speed 2

     

  2. While water is heating, Check for bones and scales then trim and cut FISH fillet to create 2 large thick fillets. Place one fillet in center of each sqare of baking paper skin side down. Place enough orange on top to cover the fish then cover with fennel. Sprinkle on dill and season with salt and pepper to taste. Then fold paper over to create a parcel. Place in bottom of varoma tray. 

     

  3. Place Zucchini and Squash on top tray of varoma and place tray and varoma lid in place.

     

  4. When water is heated place varoma into place. Heat for 10 minutes/ veroma temp/speed 2.

     

  5. While thats cooking in a small bowl mix butter, Galic and lemon then pour on asparagus and massage in then leave until Thermomix chimes again. 

     

  6. When thermomix has chimed add asparagus to the top tray with zucchini and squash replace lid and cook for a further 10 minutes/Varoma temp/speed 2.

     

  7. Check fish and veggies. If fish needs more time put Veggies in thermoserver to keep warm and continue to cook fish at varoma temp/speed 2 but check regularly!!! When done serve and enjoy!!!

     

Tip

If you want to serve more people add more veggies and also serve with the mashed potato from the BCB. I make the potato mash first and leave in the thermoserver to keep warm. Just make sure fish fillets are trimmed to similar sizes and thicknesses there is no real need for extra fish.

    Fish comes out nice and soft. I wanted to try something new but I can't say they are my favourite flavours.
