Ingredients

Herb crumb

  • 120 gram fresh breadcrumbs
  • 1/4 cup mint
  • 1/4 cup continental parsley
  • 1/4 cup cubed parmesan

Schnitzels and to coat

  • 1/2 cup plain flour
  • Salt and pepper
  • 2 eggs
  • 4 x 120g beef schnitzels
  • 1/2 cup olive oil

  1. 1. Blitz all herb crumb ingredients for 10 seconds Speed 10. Set aside in bowl

    2. Season the flour

    3. Lightly whisk eggs in a shallow bowl

    4. Press the meat into the flour, then egg then breadcrumb mixture. Pat breadcrumbs onto the meat until both sides are coated.

    5. Heat half the olive oil in a large frying pan over medium heat. Add 2 pieces of the crumbed meat. Cook for about 2 mins each side or until golden. Transfer to a plate lined with paper towel to drain.

    6. Repeat with the remaining oil and crumbed beef.

    7. Serve with vegetables, mash or a side salad.

    8. Enjoy!

Tip

Use leftover herb crumb to coat chicken, lamb cutlets, etc.

    I don't eat spicy food but my hubby does. He thoroughly enjoyed although said I could have made it hotter [he loves super hot]. I didn't have all the ingrediants to make my own Vindaloo past so used half a jar as I had this in the cupboard already. I also had a bad experience using cornflour in a curry before so skipped it but was too watery which was my error.     My husband has told me not to buy crumbed schnitzels ever again! Very easy and tasty crumb. Didn’t have mint so used extra parsley. Would have been more convenient to have weights for ingredients (1/4 cup Parmesan is about 25g and 5g each for parsley and mint).
