- 400 g pumpkin, peeled, roughly chopped
- 300 g sweet potato, peeled, roughly chopped
- 500 g water, adjust to taste
- 1 tbsp vegetable stock concentrate

1. Chop onion and garlic 3 seconds Speed 7. Scrape down sides of bowl.
2. Add butter, saute 3 minutes 100 degrees Speed 1
3. Add pumpkin and sweet potato, chop 15 seconds Speed 7. Scrape down sides of bowl.
4. Add water and stock, cook 20 min 100 degrees Speed 1
5. Blend 1 min Speed 9, gradually increasing the speed from 1 to 9
6. Enjoy!
Tip
Swap 300g water for coconut milk for a delicious flavour.

Nice with some salt and pepper and lactose free cream. I substituted the onion and butter for onion infused oil, and I used fodmap liquid stock instead of water to make it more fodmap friendly.
I followed this recipe exactly and the soup was raw after 20 min. not pleasant at all
Love the recipe. So simple and easy. Just checking speeds. Recipe states speed 13 and 15 respectively. Should that be speed 3 and 5?
Doesn't make a big enough batch. My thermo was only 2/3 full. I got this mixed up with another recipe "best ever pumpkin soup" which is very similar but makes a big batch and slightly less watery.

Made this today used olive oil with Chilli instead of butter. Added cut up steamed chicken for protein. Very nice
