Ingredients

CORNED MEAT

  • 1200 g corned beef silverside
  • 1.5 litres hot water
  • 2 dried bay leaves
  • 4 whole cloves
  • 10 mixed peppercorns
  • 1 clove garlic, crushed
  • 50 g apple cider vinegar

VEGETABLES

  • 2 Washed potatoes, cut into four
  • 2 carrots, cut in half
  • 2 sweet corn cobs, cut in half
  • 2 brown onion, cut into four

WHITE SAUCE

  • 80 g Butter, at room temperature
  • 40 g plain flour
  • 500 g full cream milk
  • 1/2 level teaspoons salt
  • 2 pinches ground black pepper
  • 60 g grated cheese, (optional)

Recipe's preparation

    Corned Meat & Vegies
  1. Place cornmeat in bottom Varoma tray and set aside.
  2. Add water, bay leaves, cloves, peppercorns, crushed garlic and vinegar to bowl.
  3. Put Varoma in place and cook for 60 min/Varoma/Speed 2
  4. Check water level. Top up with hot water if needed (1.5 litre mark)
    Water must remain over the 1 litre mark.
  5. Put Varoma in place and cook for 30 min/Varoma/Speed 2
  6. Add your potatoes, carrots and other vegies of your choice around your corn meat. Cook for 15 min/Varoma/Speed 2
    Note: You can place vegies in your simmering basket if you do not have enough room in the Varoma.
  7. Add corn and onion to top tray.
    Cook for 15 min/Varoma/Speed 2
  8. Place corn meat and vegetables in Thermoserver while you make your white sauce.
  9. White Sauce
  10. Place butter into mixing bowl and melt 3 min/100˚/speed 1
  11. Add flour and cook 3 min/100˚/speed 1
  12. Add milk, salt, pepper to taste and cook 6 min/90˚/speed 4
  13. Add cheese, then mix for 15 sec/speed 4.
    Serve Immediately.

    Note: White sauce will thicken as it cools.

Tip

Left over White Sauce can be frozen.

Your choice of vegetable can be used. Place your hard vegetables like potato, carrot in the bottom tray. Softer vegetables like broccoli and cauliflower should go in the top tray when you have 15 minutes left to cook.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
