Ingredients

Capsicum Chicken

  • 500 grams Chicken Breast, sliced
  • 15 grams olive oil
  • 2 onions, sliced
  • 2 cloves garlic, sliced
  • 1 large capsicum, sliced
  • 400 g tin diced tomatoes
  • 60 grams white wine
  • 1 tablespoon Vegetable stock paste
  • 2 tablespoons tomato paste
  • 2 tablespoons fresh thyme, (can use any fresh herbs or 2 tsp dried herbs instead)
  • 200 grams water
  • 2 bunches pak choi, (can use other greens such as asparagus, bok choi, broccoli, etc)

Recipe's preparation

  1. 1.  Slice chicken breast diagonally to get thin portions of chicken (see pic).

     

    2.  Spray varoma trays lightly with oil and arrange chicken across the two trays and set aside.

     

    3.  Slice onions and garlic.  Place into bowl with olive oil and saute for 5 mins/120 degrees/Counter-clockwise operation"Counter-clockwise operation" speed 1 with varoma tray in place.

     

    4.  While onion is sauteeing, slice capsicum.  When sauteeing is finished, add capsicum, tomatoes, white wine, vegetable stock paste, tomato paste, herbs and water to bowl.  Cook for 15 mins/varoma/Counter-clockwise operation"Counter-clockwise operation" speed 1 with varoma tray in place.

     

    5.  Place all chicken into lower level of varoma tray and arrange vegetables on top tray.  Replace varoma and continue to cook for 5 mins/varoma/Counter-clockwise operation"Counter-clockwise operation" speed 1.

     

    6.  At this stage, the meal is ready and can be served with rice, pasta, mashed potato or quinoa if desired.  If you would like to serve it without the extra carbohydrates, transfer the chicken and vegetables to a thermoserver, place simmering basket on top of lid and continue to cook the sauce for 5 mins/varoma/Counter-clockwise operation"Counter-clockwise operation" speed 1 to allow it to reduce a little more.  (You can continue to reduce it for longer if you would prefer a thicker sauce).

    Made this today and it went down well. I used 35g of apple cider vinegar instead of wine.
    will certainly be making this again and maybe try it with tofu.

    made this tonight, sauce is great - I didnt worry about using the varoma for the chicken tho, just did it all in the jug! turned out great!

    Great receipe and so easy.
    I replaced the chicken with fish and cooked in for 15 minutes. At the end we added 90g coconut cream and some coriander for a minute mixed in on speed 1Counter-clockwise operation"Counter-clockwise operation"

    Loved this very yummy. I used apple cider vinegar instead of wine and next time I'll add some chili but it was very very tasty recommend this one for sure

    This recipe was very easy to make & we all loved it. I added zucchini & eggplant to the capsicum so it was kind of like a ratatouille sauce. Loved that it was all cooked together & no other dishes to wash.

    My husband is pretty easy to please and will eat most anything, so he rarely comments about food I cook one way or the other. However this dish received overwhelming accolades from him! This is now one of our favorite Thermomix chicken dinner recipes! I chose broccoli as greens which worked well. I was even able to easily adapt this recipe for my TM31!

    I made this tonight was  big hit,  have small kids so,  added mashed potato and pumpkin, substituted vegetables for broccoli and  corn yummo.
