Ingredients

  • Pistachio butter
  • 60 g pistachios, (shelled)
  • 30 g Butter
  • 2 tsp lemon zest
  • ½ tsp thyme
  • 1 tsp Dijon mustard
  • Capsicum sauce
  • ¼ brown onion
  • 50 g oil
  • 1/3 cup breadcrumbs
  • 1 large red capsicum, – Chopped roughly
  • 1 tbsp TM Veg Stock
  • 2 tbspwhite balsamic vinegar
  • 1 MC Water
  • 2 tsp lemon zest
  • ½ tsp thyme
  • 2 large chicken breasts, sliced long ways to make 4 pieces
  • 1 small red capsicum – deseeded and cut into strips
  • Small bunchof baby spinach leaves

Recipe's preparation

  1. Pistachio Butter
    Dry Roast Pistachios at 2mins, 80 deg on reverse
    Add butter, breadcrumbs, lemon zest, dijon mustard and thyme – roughly chop on Turbo, pulse 2 – 3 times, set aside.

    Capsicum Sauce
    Chop ¼ brown onion – 2 – 3secs, speed 7, add oil and sauté 1 min, 100 deg on speed 1. Add chopped red capsicum, TM Veg stock, vinegar, lemon zest, thyme and 1 MC water. Cook for 10 mins, 100 deg on speed 2. Puree when capsicum is softened, speed 8, 20secs, and place in thermoserver to keep warm.

    Place flattened chicken breast on cling wrap and layer red capsicum thin strips and baby spinach leaves and 1 tbsp of pistachio butter. Roll up and tightly wrap filled breast with glad wrap. Seal ends well and place in fridge.

    Clean TM bowl and put 1.5 litre water in bowl. Place varoma on TM bowl and place rolled chicken breast in varoma dish and steam for 20 mins on Varoma, speed 2.

Tip

Once chicken is cooked unwrap, place on plate and cover with capsicum sauce. Enjoy!
