Ingredients
- 6 pieces chicken, Thigh Fillet
- 1 --- leek
- 1 tbsp fresh parsley
- 2 fennel bulbs, trimmed & cut into chunks
- 270 g frozen peas, (or fresh)
- 100 g Marsala
- 1 egg
- 2 tbsp TM veg stock
- 1 tsp fennel seeds
- 1 tbsp extra virgin olive oil
- 1 lemon
- salt & pepper, to taste

Grate lemon rind and mill in thermoserver 10 sec/speed 9
Mill fennel seeds 10 sec/speed 9 & put aside
Chop the leek and parsley 3 sec/speed 7
Add 1/2 the oil and saute 3 min/Varoma/speed 1 (set aside)Reduce the Marsala 2 mins/100/speed 1
Cut chicken into small pieces and place on the Veroma trays. Add salt & pepper & fennel seeds to taste.
Add all remaining ingredients into the bowl.
Cook chicken and sauce for 15 mins/Veroma/Speed 1
Add in the peas and cook for a further 5 mins/Veroma/Speed 1. Confirm that the chicken is almost cooked (should not take longer than 20 mins)
Pour sauce into thermoserver.
Put egg and juice of 1 lemon into the thermoserver and mix for 5 sec/speed 1.
With Thermomix still on speed 1, slowly add in the hot sauce (don't go too fast as it can cause the mix to curdle!)
When mixed, pour back into the Thermoserver and add the chicken and stir.
Can be served on its own or over white rice or your choice of steamed vegies
Tip
You can use chicken stock for a stronger flavour

I loved the idea of this recipe, combining fennel, chicken, leek and marsala but found the instructions confusing. I think they could possibly be somewhat clearer e.g. instead of 'add all remaining ingredients' and further along 'Add in the peas' perhaps the ingredients to be added could be listed clearly. I would also like the ingredients list to run from first to last added (not a huge issue though!) Having said all that, I cooked a version last night and really liked the flavours - thanks for sharing!
