Healthy Meatloaf

  • 1 1 small carrot, roughly chopped
  • 1 small zucchini, roughly chopped
  • 1 clove garlic
  • 1/2 onion
  • 500 grams lean minced beef
  • 1 egg
  • 1 cup breadcrumbs (approx)
  • 2 tablespoon tomato sauce
  • 1/4 cup barbeque sauce

Recipe's preparation

    Healthy Meatloaf
  1. Place carrot, zucchini, onion and garlic in TM bowl and chop for 5 seconds on speed 4.

  2. Add 500g mince, 1 egg, 1 cup of breadcrumbs, 2 Tbs tomato sauce, 20 seconds on speed 5 to incorporate.

  3. Prepare oven tray with baking paper, shape mince mixture into a loaf shape, do not make too thick or won't cook in middle. Bake in pre-heated fan forced oven at 180C for 30 minutes.

  4. Carefully remove tray and drain excess liquid and fat away. Spoon 1/4 cup of barbeque sauce over meatloaf. Return to oven for an extra 10 minutes until top is glazed.

    Serve with mashed potato and beans.

    Easy, peasy!
    I used turkey mince and added a tsp each of dried parsley and thyme. I substituted the fresh onion and garlic (as I had run out) with powdered garlic and dried onion. It so delicious and flavorful this will definitely be on rotation.

    First time meatloaf maker and this was so simple and delicious! I followed the recipe exactly and just added pink salt on top when serving and it’s brilliant! So moist and tasty!

    As a first time meatloaf maker this was an easy intro. I pre read the comments and added salt, pepper, thyme, oregano, parsley and worstershire sauce. I accidentally put the bbq sauce in the bowl so after taking that out there was a little left I couldn’t get out. But I think it added to it. Overall really tasty and an wonderful base recipe to use and add what you want. I also had no zucchini so used a whole onion instead. Thanks!

    Very tasty! Make sure mince isn’t too stuck together when placed in the bowl otherwise it doesn’t combine very well. I had to use a knife to break it up a bit and then repeat the mixing on sp 5.

    This was very nice and very simple to make. I would recommend adding salt and pepper to the recipe before transferring the mix to the baking tin.
