Ingredients
Nonya Chicken Curry
- 50 grams Rebecca's Nonya Curry Paste, ( see separate recipe)
- 200 grams coconut milk
- 8 potatoes, small, halved
- 150 grams water
- 2 lemongrass, stalks, bruised
- 6 l Curry Leaves
- 1 teaspoon raw sugar
- 1 pinch salt
- 700 grams chicken, skinless fillets, sliced
- 1 bunch coriander, fresh
- few chillies, red fresh

Weigh 50gms curry paste and 60 grams coconut milk into bowl. Cook for 2 mins at Varoma temperature on speed 1.
Add remaining coconut milk, water, potatoes, lemongrass, leaves, sugar, salt and cook at 100 degrees for 20 mins on Speed 1 on reverse"Counter-clockwise operation"
Add chicken and cook for further 10 mins at 100 degrees on Speed 1 in reverse "Counter-clockwise operation" . Ensure chicken and potatoes cooked through.
Serve with jasmine rice and top with coriander leaves and freshly chopped chillies.

Accompany with Jasmine Rice, Mango Chutney, Lime pickle and Greek yoghurt.

Really nice flavour but the potatoes have all disintegrated. It has made a lovelt thick sauce but would be nice to see if they can stay as pieces. Do you have any thoughts on this? The other thing is that I used the paddle attachment as I have found that in previus attempts at curries ( not this one) the mean has broken down to almost mice even with it on reverse.
Is 20 mins enough for cooking the potatoes? I have tried cooking nonya curry using different recipes, and each time the potatoes remain uncooked and I have to end up cooking longer, and by then the chicken pieces are almost mashed up.

Thanks for the wonderful feedback Jo - I noticed my revision hadn't saved so not sure if you made this with 200ml of coconut milk or 400ml. Both are fine - just depends how much gravy you like to have with your curry. Happy Thermomixing.

What a delicious curry! I did a bit of 'show & tell' with my folks (who have never seen a TM) and couldn't have picked a better recipe! We were going to go out for Thai tonight and now Dad thinks we may as well stay at home and use the TM!!! Thank you so much, this will become a common meal in our house!
