Ingredients

Tortilla

  • 250 g plain flour
  • 50 g butter or lard
  • 1 teaspoons salt
  • 120g hot water
  • 1 teaspoons baking powder

Fajita spice

  • 1tsp oregano, dried
  • 1tsp dried thyme
  • 1tsp paprika
  • 1tsp parsley
  • 1tsp cinnamon
  • 1tsp ground cumin
  • 1/2 tsp dried chilli flakes
  • 1tsp salt

Beef

  • 2tbls olive oil
  • 2tbls lemon juice
  • 700g Rump Steak, or beef of your choice

Tatziki

  • 350g cucumbers
  • 1tsp salt
  • 2 garlic cloves
  • 350g plain yoghurt
  • 15g lemon juice
  • 1/2tsp pepper

Recipe's preparation

    Tortillas
  1. 1. Place flour, butter, salt in mixing bowl and mix 10sec/sp7



    2. Add hot water and baking poweder, mix 10sec/sp7 then knead for 1min

    3. Transfer dough to a large bowl, cover with glad wrap and leave to rise for 30mins

    4. Continue with tatziki

  3. 5. Place cucumbers and salt in mixing bowl then chop 3 sec/speed 5. Transfer to simmering basket and drain for approx. 10 minutes. Using a large spoon or your hands, squeeze as much water out of chopped cucumber as possible then set aside.
    6. Place garlic and oil in mixing bowl then chop 3 sec/speed 5.
    Add reserved chopped cucumbers, yoghurt, lemon juice and pepper then mix 20 sec//speed 2.5. Adjust seasoning to taste, transfer to a bowl and refrigerate before serving (see tip).

  5. 7. Add all fajita spice ingredients and mix 3sec/sp 5

    8. Add oil and lemon juice, mix 3sec/sp 5

    9. Add beef, capsicum and onion if you wish 5sec//sp 2

    10. Leave to marinate 20min if you have time, I don't always and its still great.

  6. Beef & Tortilla cont..
  7. 11. Click home screen, go into Cookidoo® and search 'browned beef strips' follow the recipe by adding a little oil, 250-300g beef/capsicum and saute you beef. you'll need to do this in batches.

    12. While beef is continue continue with tortillas.

    13. Divide dough into 8 equal-sized balls. Roll each piece out to a thin disc ( 15-18 cm).

    14. Cook tortillas, one at a time in a frying pan, pressing with a spatula to flatten. Once ready, stack and keep warm in a thermoserver

    15. Either cut tortilla into 4 and serve seperate alongside tatziki, and salad options or Fill tortilla's with beef mixture, tatziki and your choice of topping eg, lettuce, tomato, cheese etc

Tip

I'm intollerant to onion and garlic, you can add onion with the beef and capsicum and garlic to the spice mix.
