Ingredients

Burgers

  • 2 cloves garlic peeled
  • 200 grams red onion quartered
  • 20 grams Extra Virgin Oil
  • 1/2 tablespoon Ground Sage
  • 1/4 teaspoon ground cumin
  • 500 grams Beef, (Organic Lean if you can)
  • 30 grams Bread Crumbs, (Fresh See Everday Cookbook)
  • 1 teaspoon Dijon mustard
  • 1 egg
  • Sea Salt and Black Pepper Grounded, To Taste
  • 4 bread rolls, 10cm In Diameter
  • Salad Mix, Amount To Taste
  • Avacado, Amount To Taste
  • Baby Beetroot Sliced, Amount to Taste
  • Chevre Goats Cheese, Amount to Taste (Sliced Mature Chedder as a Sub)

Potatoes

  • 500 grams Brushed Potatoes, (Organic if you can)
  • 1 tablespoon duck fat

Recipe's preparation

    Burgers
  1. 1.

    Preheat oven to 210°C. Line one baking tray with baking paper and set aside.

     

    2.

    Place garlic into mixing bowl and chop 3 sec/speed 7. Transfer into a bowl and set aside.

     

    3.

    Place Red onion and oil into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula and saute 3 min/Varoma/speed 1, placing simmering basket instead of measuring cup onto mixing bowl lid.

     

    4.

    Add reserved garlic, Grounded Sage and Cumin and cook 1 min/Varoma/speed 2, placing simmering basket instead of measuring cup onto mixing bowl lid.

     

    5.

    Add all remaining ingredients Beef, Bread Crumbs, Egg, Dijion Mustard  and Salt & Pepper mix 8 sec/speed 5, or until combined.

     

    6.

    Shape the mixture into Cricket ball-sizes and place onto prepared baking trays, repeat until all mixture is used (mixture should make approx. 4 patties).

     

    7.

    Place patties into oven and bake (210°C) for 8-15 minutes, or until cooked through.

     

    8. Assemble Burger with Roll, Salad, Avacado Beetroot and Cheese.

  2. Potatoes
  3. 1. Clean and peel Potatoes. Parboil (10- 15 minutes) and then cut 5mm slices

    2. Add 1 tablespoon duck fat to a saucepan and season with Salt and Pepper.

    3. Give pan a shake to rough up edges and coat the Potatoes.

    4. Then place on roasting or baking tray in Oven and bake (210°C) for 20-30 minutes until Golden and Crunchy.

     

Tip

Put the Potatoes first into the oven and then add the Burgers during the same Cook time

    Lovely burgers!

    i shaped them in the size of burgers rather than cricket balls, and they cooked just fine.  The whole family enjoyed them.  Easy to follow recipe, will definitely make again.  I really like that they can be cooked in the oven instead of frying.

    These patties were pretty tasty. I used lots of fresh sage and chopped it with the garlic. I could have added more garlic. I overcooked the patties by about 5-10mins but they remained moist.

    Really liked the consistency of these burgers. They were nice and moist, not dry atall. They lacked a bit of flavour , I think next time I would add a few more herbs and spices.

    Delicious!  I only made the pattie component for a BBQ, however I'm sure putting the patties in a bun with the salad and goats cheese is a winner as well.  tmrc_emoticons.)

    Really easy, and absolutely delicious result. I used fresh sage, and lots of extra garlic. Next time I would make the burgers much smaller, and flatten them out considerably before cooking. 

    I'll definately be cooking this again.

    Tastes nice, thanks.  Used brown onion though as I didn't have a red one tmrc_emoticons.)
