Ingredients
Stir-Fry
- 2 tablespoons oilve oil
- 2 shallots, roughly chopped
- 2.5 cm Ginger, peeled
- 2 cloves garlic peeled
- 4 skinless chicken breasts, cubed
- 2 tablespoons hoisin sauce
- 2 tablespoons oyster sauce
- 1 tablespoon light soy sauce or tamari
- 150 grams dried cranberries or craisins
- 4 spring onions, diagonally sliced
- 125 grams beansprouts
- 100 grams carrot, julienne
- 1/2 red capsicum, sliced
- 250 grams thin rice noodles
Garnish
- 8 Basil leaves
- 1 red chilli, sliced
- Oil for frying

Place oil into mixing bowl and heat 2 min/Varoma/speed 1.
Add garlic , spring onions and ginger and chop and saute 2 min/100C/speed 4.
Add vegetablesand chicken and cook 7-8 min/100 C/"Counter-clockwise operation" /speed soft. After 3 minutes cooking time add sauces. Check that chicken is cooked all the way through.
Add spring onions, bean sprouts and other vegetables and stir 3 min/100C/speed soft.
Combine stir-fry ingredients with noodles and top with deep-fried basil & chilli.
In a small frypan containing 1 cm of oil, deep-fry the basil leaves and red chilli in 2 batches for 10-30 seconds, until crisp.
Use the basil and chilli as a garnish for the stir-fry

krosp: when did you add the cranberries
I just made the sauce from this and it was AMAZING!! I tend to make a big batch of stirfry so cant do it in the thermomix as its not big enough. I steamed all the veggies in the veroma and cooked the noodles then did the meat and finishing off in the wok.
This was delicious but there were several issues with the recipe:
- it mentions spring onions twice, presumably instead of shallots
- step three says "vegetables" and step four says "other vegetables" but doesn't specify which ones
- cranberries arent mentioned in the method
- it seems like a massive amount of chicken for not many vegetables
we ended up only using three chicken breasts and that was better. It was really tasty and sweet and even my husband liked it.
