Ingredients

  • 2 medium zucchini
  • 90 grams cheese
  • 160 grams SR flour
  • 1 tin corn kernels, drained
  • 1 onion medium, approx 100 gms
  • 100 grams oilve oil
  • 5 Eggs.
  • 140 grams bacon sliced, OR chicken
  • 2 tablespoons extra olive oil

Recipe's preparation

    METHOD:
  1. 1:   Preheat oven to 180 degrees

    2:   Place onion (cut in half) in Closed lid"Closed lid" . Process speed 4/ 9 seconds. This depends on how chunky you want your onion.

    3:   Add extra oil to Closed lid"Closed lid" cook 2mins 90 degrees speed 1

    4:   Add zucchini process speed:4/ 4 seconds.

    5:   Add eggs, flour, oil, bacon, corn kernels & 45grams of the cheese. Process on Counter-clockwise operation"Counter-clockwise operation" speed:4/ 20 seconds.

    6:    Pour into a greased dish 20 x 20 cms. Sprinkle with other 45 grams of remaining cheese.

    7:    Cook for 40mins, until firm.

    Enjoy with fresh crusty bread and garden salad.

Tip

Can  be made in muffin tins for individual Quiches. Great for lunches.

    levely recipe. I made mine gluten free and used milk instead of all the oil. Just had to cook s bit longer. The crust was beautiful. Thanks for sharing

    Thank you everyone for your comments. I have altered the recipe a little, so hope its easier to follow now. Of course according to your taste, you will change ingredients.

    This recipe has been handed down and has always been a winner in our household. However it wasn't as easy to convert it into writting.... for a TM recipe.

    Good quiche! But I had to do some changes, like reducing the oil (40 grams) and the eggs (only 3) and leaving out the corns.

    I agree with Annae...probably you should rewrite it!

    This recipe needs to be rewritten. What do you do with the corn? And the ingrdiants are all over the place. The cheese needs to be grated too.

    but, overall it was a good recipe. My husband loves it , my 5 yrold ate it willingly but my 3yr old didn't, but like me I thinkit was because there was too much onion. Maybe 1/2 would be better. That's what I'll do next time.
