- 1 brown onion, approx 100gms
- 2 cloves garlic
- 1 --- chilli, 1-2 according to taste
- 2 Eggs., medium-large
- 1 litre water
- 20 grams water, additional
- 500 grams chicken thighs diced into 2cm pieces, Replace with TORFU for Vegetarian
- 35 grams peanut oil/other vege oil
- 10 grams Coriander (fresh)
- 250 grams bean sprouts, fresh
- 200 grams Rice noodles, Wide/thick
- 80 grams peanuts, dry-roasted, Can leave these whole or crush if preferred on Speed 5/ 4 seconds.
Sauce Ingredients
- 40 grams tomato sauce/ketchup
- 40 grams soy sauce
- 50 grams fish sauce
- 50 grams oyster sauce
- 150 grams Chilli Sauce (Hot or Sweet)
- 80 grams Brown Sugar.

- * Add diced Chicken pieces to Varoma Dish, then on the Varoma tray place wet scrunched baking paper.
* Whisk eggs with 20gms of water, then place on Varoma tray. (This step is optional - can cook eggs on stove top if preferred).
* Add the 1litre of water to "Closed lid" .
* Place the Varoma on the "Closed lid" , and cook 10 mins/ Varoma Temp/ Speed 4. Once the omlette is cooked, either stovetop or Varoma method, roll the omlette into a tight roll, then dice in thin strips, then put aside & keep warm.
*replace the Varoma Dish (with the chicken in it)back on top of the "Closed lid"
You will need to continue to cook the chicken for another 10-12 minutes or so. Check that the chicken is cooked & keep warm with egg.
* Place the Pad Thai Rice noodles into boiling water in a Thermo-server, soak until cooked. (OR follow instructions on side of packet for cooking instructions).
*Once noodles are cooked, drain excess water from Thermo-server & add chicken & egg to keep all warm.
* Empty water from "Closed lid" then dry "Closed lid" . Add onion, garlic, coriander and chilli, on to running blades- mix Speed 5/ 4 seconds. Scrape down sides, then add oil to "Closed lid" without MC and saute 2minutes /Temp 90C/ Speed 2.
* Combine the sauce ingredients into "Closed lid" and mix Speed 3/ 5 seconds.
* Add to rest of ingredients along with the bean sprouts in the thermo-server.
* Serve with peanuts over the top, along with extra coriander or parsley if preferred. ENJOY! - Vegetarian Option.
Omit the chicken and add diced Torfu, into the thermo-server with the rice noodles.

Very yum and very easy to make, I tend to use 600 grams of chicken and I choose to cook the egg in pan on the stove. Thanks for this recipe
Very nice!
Just did the sauce in the thermo and the rest in a pan. Didn't have any chilli sauce so left it out and just added about 15g oyster sauce extra. Husband found it a bit too sweet so might put slightly less sugar next time.

Delicious! I travel to Thailand frequently and this recipe is pretty spot on. I did cook the egg in a wok and also finished the chicken off this way. Will definitely be a favourite in this house.

This was very yummy! I did just the sauce in the thermomix and cooked the rest on the stove. It was very yummy even without the mung beans (I didn't have any). Next time I'm going to try adding some peanut butter to the sauce and garnish with spring onion!
