Recipe's preparation

    Noodle Dough
  1. Weigh flour, water and salt into TM bowl
  2. Knead Dough mode"Dough mode" 5 mins.
  3. Remove dough from bowl onto silicone mat and bring together to a large ball. Knead until the dough is smooth.
  4. Divide dough into 2 portions. Roll into an oval approximately 2 cm thick.
  5. Oil a baking tray well. Place one dough disc onto tray and coat with oil on both sides well. Repeat with second disc and place on tray on top of each other. Cover with cling film and leave to rest for approx 1.5 hours.
  6. Add pot of water to hob to boil.
  7. After resting, take one disc of dough and cut widthways into strips. If you would like thin noodles, cut into 1cm strips. For wider noodles cut into 3-4 cm strips.
  8. To make noodles, take a strip of dough and gently pull and stretch from each end, slapping on the bench as you pull the ends away from each other. This will stretch the noodles. Fold in half and repeat.
  9. Place pulled noodles straight into boiling water and cook for approximately 1 minute, or until the noodles float to the surface.
  10. Add straight to bowl, top with desired sauce and toppings and enjoy!

Tip

For an easy noodle topping, heat oil in a pan. Whilst the oil is heating, chop garlic, spring onion, ginger. Top the noodles with chilli flakes, garlic, ginger, spring onion, szechuan peppercorns and toasted sesame seeds. Once oil has reached temp (smoking or glossy haze on surface of oil), pour oil over the toppings, sizzling as your pour it on. Add soy sauce and black vinegar to taste.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
