Ingredients
Salad
- 180 g Buckwheat groats, rinsed but not soaked
- 350 g salted water
- 6 stalks asparagas, chopped into 2inch lengths
- 1/2 red capsicum, sliced into lengths
- 1 bunch baby spinach, rinsed
- 2 tablespoon parsley, roughly chopped
- 1 tablespoon mint, roughly chopped
- 2 tablespoon coriander, roughly chopped
- 1 tablespoon olive oil
Dressing
- 2 tablespoon extra virgin olive oil
- 1 tablespoon fresh lime/lemon juice
- Salt & pepper to taste

Place chopped vegetables and olive oil into TM bowl. Saute for 3-5 mins (or until as cooked/al dente as you ike) at 100C on reverse + soft speed.
Remove from bowl and set aside.
Place buckwheat and water into TM bowl. Cook for 15 mins (or until the water is absorbed) at 100C on reverse + soft speed.
Rinse buckwheat in steamer basket and allow to cool.
*Ratio buckwheat : water is 1 cup : 1.5 cups.
When buckwheat is cool, fluff it up with a fork. Toss together with vegetables and herbs.
Place dressing ingredients into TM bowl. Mix for 30 sec on speed 4. Pour over salad and stir through.
Tip
It is a good idea to sift your buckwheat groats before cooking to remove impurities and broken groats. Broken groats become gluggy when cooked and this makes the salad less enjoyable. (it's usually impossible to remove all broken groats so it is also good to rinse the buckwheat after it's cooked and stir through some olive oil).

This is a beautifully fresh salad especially with lemon juice. I used chargrilled peppers & artichoke to add some vinegar flavouring to the buckwheat. Lovely. Thank you
