Ingredients

  • 1 clove garlic, peeled
  • 1 brown onion, halved
  • 15 grams olive oil
  • 4 firm tomatoes, halved
  • 2 cans Chickpeas, drained
  • 1 tablespoon TM stock
  • 70 g (3 tbs) Rogan Josh curry paste
  • 25 g (1 tbs) tomato paste
  • 2 Kaffir lime leaves
  • pinch salt
  • 1 lime, juiced
  • 200 g baby spinach or roughly chopped silverbeet
  • lime quarter, to serve (optional)
  • coriander leaves, to serve (optional)
  • hot mango pickle, to serve (optional)
  • Steamed Basmati Rice

Recipe's preparation

  1.  

    Add onion and garlic chop 3 seconds/speed 7

     

    Scrape down sides

     

    Add olive oil sautee 3 minutes/Varoma/Speed 1 (MC off)

     

    Add tomatoes chop 6 seconds/speed 4

     

    Add chickpeas stir 10 seconds/speed 2/Counter-clockwise operation"Counter-clockwise operation"

     

    Add stock, curry paste, tomato paste stir 2 mins/100 degrees/speed 1/Counter-clockwise operation"Counter-clockwise operation"

     

    Add kaffir lime leaves, salt, lime juice, spinach – 10 minutes/100 degrees/speed 1.5/Counter-clockwise operation"Counter-clockwise operation"

     

     

     

    Serve with rice, top with coriander, lime wedge and hot mango pickle.

    Great favourite of mine, have been making this very recipe for years. Was going to convert for THERMOMIX but having found your conversion didn't need to! Thanks so much for your hard work, can now follow yours and it indeed comes out exactly the same as the original.
