Ingredients

Kini (Zuchini) Slice

  • 2 --- Zuchinis
  • 2 --- carrots
  • 100 grams sweet potato
  • 100 grams Tasty cheese, (Optional)
  • 1 --- onion, (Spanish best for colour)
  • 150 grams Self Raising Flour
  • 8 --- free range eggs
  • 20 grams EVOO (extra virgin olive oil)

Recipe's preparation

  1. Grate tasty cheese 3 seconds on Speed 5 (if using) and set aside. 

     

     

  2. Add to jug Zuchinnis, Carrots, Onion and Sweet Potato (all roughly cut in large chunks) and chop 5 seconds on Speed 5.

    Size of the vegetables when chopped is really to personal taste so you can adjust the speed and length of time to suit your preference.

  3. Add cheese (if using), SR Flour, Eggs, EVOO to vegetable mixture and stir 10 seconds on Counter-clockwise operation"Counter-clockwise operation" Speed 5-6 until well combined.

  4. Pour in greased quiche or casserole dish and bake in 180 degree fan-forced oven for 45-50 minutes (longer cooking time required for non-fan-forced ovens).

     
  5. When cooked, remove from oven to cool - if you leave in the oven it will dry out. Slice in to 8 'chunks'.

     

Tip

The name 'Kini Slice' comes from my little one's inability to say 'Zuchini'. This is a very flexible recipe and can be used in muffin pans to make great, easy kids lunch box meals. The muffins freeze and defrost really well. The sweet potato adds that extra sweetness that you don't usually find in a traditional zuchini slice. You can add any other vegetables that you like - we sometimes use capsicum or pumpkin.

Kini Slice is great served with a green salad or just on it's own. For those with family members who want meat - you can add chopped grilled bacon when adding the eggs.

    This was delicious. Was super quick and easy too!! Like Danny I only used 5 eggs but the consistency was perfect we thought. I also added diced bacon, garlic salt, black cracked pepper and chilli flakes. Cooking 4

    Made this dish last week and it was absolutely delicious! Only problem is we didn't find it very filling so should have it as a side or with a big salad. I made it again today but this time used only 5 eggs to make it less runny before cooking and stacked some sliced ham on top and covered with cheese. Very nice!     So quick and easy to make. Kids loved it hot and asked to take some for school lunch, so cold tastes pretty good too.

    The kids just had this for dinner and all 3 of them loved it! The best thing was that it only took about 2 minutes to prep and get into the oven. We will definitely be having this again. Thanks Steph tmrc_emoticons.-)
