Ingredients

Pancake mix

  • 280 g self-raising flour
  • 350 g Milk, (Non-dairy works well too)
  • 2 eggs
  • 1 heaped teaspoons Stock powder or salt

Filling

  • 300 g Cabbage mix, (I use the preprepared mix from the supermarket, like kale slaw or Asian cabbage mix. Avoid the options with lettuce)
  • 200 g sliced button mushrooms
  • 200 g fresh bean sprouts
  • 80 g Cheddar cheese, Cut into cubes
  • oil, For shallow frying

To serve

  • Kewpie mayonnaise
  • Okonomi sauce
  • Bonito flake

Recipe's preparation

    Pancake mix
  1. Add the pancake ingredients to TM bowl and mix 15 seconds/speed 6
  2. Filling
  3. Add the filling ingredients to the pancake batter, and stir 10 second/speed 5 Counter-clockwise operation"Counter-clockwise operation"
  4. Cooking
  5. Heat fry pan and coat with oil. Pour 1/4 of the batter and using a spatula flatten the batter so it's the same thickness, and a tidy circle. Mine is usually about 1cm thick. Flip once bubbles form. Pancake should be thick, but nice and crispy. Repeat to make the 4 pancakes.
  6. Serve each pancake on a plate and drizzle with Okonomi sauce and kewpie mayonnaise, and sprinkle with bonito flakes.

Tip

You can use any mix of veggies, tofu or meat. The ingredients above are my fav.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
