Ingredients
Savoury shortcrust pastry
- 300 g unsalted butter cubed
- 600 g bakers flour
- 5 g salt
- 15 g white vinegar
- 170 g water, chilled
Filling
- 1 Medium red onion quartered
- 30 g olive oil
- 1 bunch silverbeet (stems removed), roughly chopped
- 200-300 g Feta cheese (cubed or crumbled)
- 2 eggs
- 1/2 teaspoon ground nutmeg
- salt
- pepper

Place flour, butter and salt into a mixing bowl and mix 10 sec/speed 6, or until mixture resembles breadcrumbs.
Add water and knead 10 - 20 sec / "Closed lid" / "Dough mode" .
Transfer dough to a lightly floured bench top and knead into a tight ball. Wrap in plastic wrap and place in the fridge for a minimum 15 minutes.
Preheat oven and a flat baking tray to 200°C. Lightly grease base and sides of a 3cm deep, 24cm loose-based flan pan.
Once chilled, cut the ball in half. Wrap one half in plastic wrap and place in freezer for another time. Roll out the dough on a large sheet of lightly floured baking paper, to the desired thickness and size.
Line pan with pastry. Trim excess and prick several times the base with a fork. Cover with a sheet of baking paper and add pastry weights to blind bake.
Cook in over for 15 mins.
Add onion to TM bowl. Chop for 3-4 sec/speed 4.
Add oil and sauté 3 min/varoma/speed 1.
Add roughly chopped silverbeet to the TM bowl. Chop for 3-4 sec/speed 4. Then cook 3 min/varoma/speed 1.
Remove excess liquid from the onion/silverbeet mixture.
Add feta to the TM bowl and mix 3-4 secs/speed 2 (less if you like the feta chunky).
Fill tart case with mixture.
Crack eggs into a small bowl. Add nutmeg and whisk till combined. Poor egg mixture over and through the onion/silver beet mixture in tart case.
Season with salt and pepper and bake in oven at 180°C for 25 min.
Serve with green leaf salad.

That's correct. I guess you could always half the pastry ingredients and make enlighten for one tart. I stored mine in the freezer and when I needed it, I just defrosted it and it was perfect.
