Ingredients
Korma
- 1 tablespoon Mustard seeds
- 2 tablespoon extra virgin olive oil
- 1 large onion, peeled, cut in half
- 2 cloves garlic, peeled
- 2 centimetre root ginger, peeled
- 1 teaspoon ground tumeric
- 1 teaspoon Ground Coriander
- 1 teaspoon ground cumin
- 1 tablespoon TM Vege Stock Paste
- 600g can Canned crushed tomatoes
- 400g can chickpeas (rinsed and drained)
- 1 sweet potato - 2cm cubed
- 200mls coconut cream
- 1 tablespoon Coconut sugar
- 150g small leaves fresh spinach or rocket
- Salt and pepper to taste
- --- fresh coriander, chopped, (optional)
- slices fresh chilli, to garnish, (optional)
Cooked Quinoa or Rice to serve

- Place mustard seeds & oil in TM bowl and heat Speed 1/Varoma/2mins.
Add onion, garlic, ginger chop 5secs/speed 6, scrape down bowl.
Cook 2mins/100 degrees/speed 2.
Add spices and cook 1min/100 degrees/speed 2.
Insert butterfly, add crushed tomatoes & cubed sweet potato and brown sugar, cook 10mins/100 degrees/speed 1"Counter-clockwise operation" . Put steamer basket on lid to avoid splashing.
Add remaining ingedients and cook another 5 mins/100 degrees/speed 2"Counter-clockwise operation" .
Add seasoning with salt & pepper if desired.
To serve place cooked quinoa in bowl top with baby spinach & ladle over Sweet Potato Korma.
Garnish with freshly chopped chilli & coriander if desired.
Tip
Can be served with rice, quinoa or any grain, or pureed into a soup.

Awesome family meal - added more veg at onion stage (zucchini/capsicum) to chop & hide 😉 Also added cardamom pods (as wasn't sure about 2 lots of cumin?)

Clairey76 - I wonder if adding a little extra oil would help? I'm never too exact when adding oil and tend to over pour, mostly because I'm worried things will stick or dry out. You could try adding more oil at the mustard seed stage. This honestly is the best korma recipe I've made and would hate for this one bad experience to ruin it for you! If you're still worried about the mustard, the first time I cooked this I didn't have any seeds so I used whole grain mustard from a jar and skipped the first step It still turned out really well. Hope that helps
Honestly cannot recommend this enough!!!! I've made this a couple of times now and we absolutely devour it. It's the best Indian dish I've ever made!! Goes so well with some tumeric brown rice and papadums OR thermo-made naan bread when I'm feeling adventurous. Thank you for this recipe, it's an absolute staple in our home.
Delicious. I put in more veg and so did the last minutes on the stove in a large pot.

We all loved this dish . I didn't experience any bitterness or needing to cook longer. It's become a regular meal in my home
Not sure if I did something wrong, but wasn't a fan of this at all. Something was quite bitter, not sure if it was the mustard seeds but it ruined the whole dish for me ............. Actually, I just googled and it said that mustard seeds can be bitter if either overcooked/burnt or undercooked. Would be intereted to know if anyone else has experienced this when following the recipe above?
