Ingredients

Unbeatable Vegan Nachos Sauce

  • 1.5 --- Cups Cashews, Estimated is fine.
  • 1 --- brown onion, Halved
  • 4 cloves garlic, Whole
  • 1 level tablespoon coconut oil, Or oil of your choice
  • 2 heaped tablespoons cumin
  • 3 heaped tablespoons Garlic powder
  • 3 heaped tablespoons Onion powder
  • 5 heaped tablespoons Nutritional/savoury yeast, Note: This is different from Baker's yeast. DO NOT USE bakers yeast.
  • 1-2 --- large potatoes, Peeled, chopped into 1 inch chunks
  • 250 g water
  • 250-300 g coconut milk, Or your choice of dairy free milk
  • 2 pinches salt, to taste

'Meat' and salsa

  • 1 --- onion, Halved
  • 3 cloves garlic, Whole
  • 2 cans Mixed beans, Sometimes known as 5 bean mix depending on the brand
  • 1 can diced tomatoes
  • 1 level teaspoon chilli powder, Add more if you like it spicy

Nachos

  • 3 packages Beanfields Nacho Chips, Or other vegan Nacho chips.

Recipe's preparation

    To make nacho sauce
  1. 1. Preheat oven to 190 degrees celsius.

    2. Prepare to be amazed. You might want to have some napkins on hand to wipe away your drool.

    3. Soak cashews in boiling water for half an hour.

    4. Add to mixing bowl coconut oil, onion and garlic, chop for 3sec sp5, MC on. Scrape down bowl.

    5. Cook at 110deg for 3min, sp 1.5.

    6. Scrape down bowl and add potatoes, drained cashews, cumin, garlic powder, onion powder, and cook for 7min, 110deg Counter-clockwise operation"Counter-clockwise operation" sp1.5.

    7. Add water, nutritional yeast and coconut milk, cook for additional 5min 110 deg, sp 1.5.

    8. Remove lid and allow to cool for a few minutes. Replace lid with MC on, blend for 3min gradually increasing in increments until you reach sp 10.

    9. Sauce should be smooth, if you need to add more milk do so now and give it a quick blitz to mix through.

    10. Move to a large bowl and set aside.
  2. To make 'meat' and salsa
  3. 1. Rinse TM bowl. No need to dry.

    2. Add to mixing bowl coconut oil, onion and garlic, chop for 3sec sp5, MC on. Scrape down bowl when it's done.

    3. Cook at 110deg for 3min, sp 1.5.

    4. Scrape down bowl and add 2 cans rinsed beans and diced tomatoes.

    5. Cook 5min 110deg sp 1.5 Counter-clockwise operation"Counter-clockwise operation" (reverse speed). Scrape down bowl again.

    6. Add chilli powder and cook for a further minute on 110deg sp 1.5

    7. Set aside.
  4. Nachos
  5. 1. Arrange nachos on a lined baking tray to cover whole of tray. Those things are expensive so try to avoid temptation and don't eat the whole packet before they go in the oven.

    2. Spoon half the bean mix onto the nachos, followed by a generous serving of nacho sauce.

    3. Repeat with another layer of nachos, and then bean mix and sauce.

    4. Bake in oven for approx 10-15min.

    5. Be amazed and tell me how much you love it below!

    TIP: I find this recipe makes a bit more sauce than you need, so save it to use the next day as a dip. It's delicious with carrot and celery dipped in!

    KayV: I use heaped tablespoons for a fuller flavour. If you like you could use teaspoons until you get used to the taste.

    Is the heaped tablespoons of the cumin, garlic powder and onion powder correct or should it be teaspoons?tmrc_emoticons.) PS. I'm thinking the 5 heaped tablespoons of Nutritional Yeast is correct?
