Ingredients

Pasta

  • 15 g virgin olive oil
  • 4 cloves garlic, chopped
  • 200 grams mushrooms, sliced
  • 1 bunch fresh asparagus, 1 inch pieces
  • 250 grams Penne Pasta

Sauce

  • 30 gram virgin olive oil
  • 6 cloves garlic, chopped
  • 227 grams tofutti vegan cream cheese
  • 195 grams coconut milk
  • 60 grams vegan parmesan, (optional)
  • 1 tablespoon nutritional yeast
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes, (or paprika)

Recipe's preparation

    Pasta
  1. add 1000g water and pasta to bowl.

     

  2. 10-12 minutes/100c/speed 1

  3. set aside

  4. chop garlic 4secs/speed 7

  5. add oil, mushrooms and asparagus.  Sautee 6 minutes/120c/speed 1.

    then set aside

  6. Sauce
  7. Chop 6 cloves garlic.  Set approximately 1/3 aside.

  8. Add olive oil.  Sautee 3 minutes/120c/speed 3

  9. Add all sauce ingredients to bowl.   Blend until smooth.  Scrape down sides

    2 minutes/70c/speed 7

  10. heat - 8 minutes/100c/speed 3

  11. add pasta and stir

    2 minutes/70c/speed 1

  12. add mushroom mix and stir

    3 minutes/70c/speed 1

  13. serve immediately

Tip

This recipe came from www.minimalistbaker.com and I have loved it for ages.  This was my first attempt at converting something for thermomix.

There is a LOT of garlic in this, but its worth it

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    This was nice! I was sceptical about the cream cheese at first but it's really good. Silly me was talking to the kids and skipped a step, so the garlic wasn't cooked enough. But I put it back in for another few minutes and it was really lovely after that tmrc_emoticons.)
