Ingredients
Macaroni Cheese
- 350 g Penne Pasta
- 45 g Butter
- 85 g plain flour
- 750 g Milk
- to taste sea salt
- to taste black pepper
- 150 g Parmigiano Reggiano Cheese
- 150 g Gruyere cheese
- 45 g truffle pecorino cheese
- 2 slices leg ham (1 cm thick)
- 20 g Dijon mustard
- dash Tabasco sauce
- 1/2 teaspoon grated nutmeg
- 1/2 cup dry breadcrumbs
- 2 tablespoons grated parmigiano reggiano

1. Heat oven to 200 degrees C.
2. Cook the pasta in plenty of simmering water til tender, then drain well.
3. Cube the parmigiano reggiano, gruyere and truffle pecorino, then add to TM bowl and grate 10 secs, speed 9. Set aside.
4. Add butter, milk, plain flour, salt and pepper to TM bowl. Cook for 10 mins at 90 degrees C on speed 4.
5. Add cheeses, nutmeg, mustard and tabasco sauce to bowl and cook for 1 min at 90 degrees C on speed 4.
6. Lightly grease a ceramic baking dish with olive oil. Pour pasta into dish, sprinkle cubed ham evenly over the pasta, then pour the cheese sauce into the dish. Stir to combine and then smooth over with a spatula or back of a large spoon.
7. Combine breadcrumbs and 2 tablespoons of grated parmigiano reggiano cheese and sprinkle evenly over the top of the macaroni cheese.
8. Bake for 30 minutes, or until the sauce is bubbling and the crust is golden brown.
Tip
This recipe was adapted from one that appeared in The Age Good Weekend in April 1998. It's a fantastic and very indulgent version of the classic macaroni cheese.
There was no truffle pecorino in the original recipe. Instead, the baking dish was greased with 1 teaspoon of truffle oil. This is also delicious.
It is great served with a green salad.
