Ingredients

Black rice with prawns and cuttlefish

  • 8 large raw prawns
  • 700 g water
  • 25 g olive oil
  • 2 garlic cloves, Finely sliced (See Tips)
  • 500 g cuttlefish, cut into 2 cm pieces
  • 70 g onion, in pieces
  • 70 g canned diced tomatoes
  • 300 g rice
  • 1 fish stock cube, (See Tips)
  • 8 g squid ink, (2 sachets)
  • 1 tsp salt
  • 50 g olive oil

Recipe's preparation

  1. Peel and devein the prawns. Place the shells and heads inside TM bowl. Place prawns in a small bowl and set aside.
  2. Add 700g of water to TM bowl and cook 10min/100ºC/sp 1. Once cooked strain the stock through a fine sieve, to reserve the prawn stock for later. Discard the shells and heads. Rinse and dry TM bowl.
  3. Add 25g olive oil and garlic finely sliced. Cook for 2min/120ºC/Gentle stir setting"Gentle stir setting"
  4. Add cuttlefish and cook 12min/VAROMA/sp1Counter-clockwise operation"Counter-clockwise operation" . Set aside (See Tips).
  5. Add onion, 50g olive oil and canned diced tomatoes. Blend 2sec/sp5 and cook 5min/120ºC/sp1
  6. Add reserved cuttlefish and reserved prawn stock, squid ink and salt and cook 14min/100ºC/sp1. Pour out half of the rice into a Thermomix server, place prawns and cover with the remaining rice, cover and set aside for a few minutes. Serve hot.

Garlic can be chopped for 2sec/sp5 but traditionally is served with sliced garlic - the joy is finding those golden garlic slivers.

Use your Thermomix server as it will help cook the prawns perfectly.

Can be served with alioli.
