Ingredients

Lamb & Chickpea Pilaf

  • 400 grams lamb fillets, cut into 2cm cubes
  • 1 onion, halved
  • 2 cloves garlic, peeled
  • 3 centimetres Ginger, peeled
  • 1 teaspoon Moroccan spice
  • 250 grams basmati rice, washed
  • 500 grams beef stock
  • 70 grams dried apricots, chopped
  • 400 grams can Chickpeas
  • Lemon juice (1/2 lemon)
  • Handfull parsley leaves only, chopped

Recipe's preparation

  1. Place onion, garlic and ginger into TM bowl and chop for 4 secs speed 5 Add olive oil and sauté for 3 mins / Varoma / speed 1.  Add Moroccan spice and lamb, sauté for 3 mins / 100 degrees / Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" Add rice and beef stock, cook for 25 mins 100 / degrees / Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" Add apricot, chickpea and lemon juice in the last 3 minutes of cooking time.Serve with chopped parsley

Tip

Could also serve with lightly toasted cashews

    How much olive oil is this quantity. I cooked this and used 20ml but how much does the actual recipe require?

    Not that keen on white rice so added Brown medium grain, swapped beef stock for chicken stock and cooked for an extra 20 minutes. Also added 1 X 400gm tin of lentils with the chick peas, turned out amazing !!! Next time I will experiment with adding some green veggies...

    I think the butterfly would help mix it more evenly, and cook more evenly

    Wasn't so keen on this recipe. I found the beef stock overwhelmed the flavour but I would give it another go and change it up a little.

    Really liked the flavours of this but my rice turned to mush!! Can't figure out how it could go wrong tmrc_emoticons.( ...any ideas? I tried again and reduced cooking time by 10 mins and it was better but bottom 1/3 still mushy...

    We had this last night. There was an issue with the lamb I bought so I used beef. I didn't have apricots so I used sweet potato. Was delicious. The husband loved it.
