Ingredients

Sauce

  • 1 clove garlic
  • 1 brown onion, Quartered
  • 20 grams olive oil
  • 150 grams Whole pepperoni, Sliced into discs or half moons
  • Salt and pepper, To taste
  • 1 level teaspoon Dried Italian or mixed herbs
  • 1 level teaspoon Dried parsley
  • 0.5 teaspoon sugar
  • 1 can crushed tomatoes, 410g
  • 1 red capsicum, Sliced
  • 20 Black kalamata olives, Pitted
  • 80 grams feta, Broken into pieces or crumbled
  • 250 grams Penne, Cooked separately

Recipe's preparation

  1. Cook the penne on the stove while you are preparing the sauce and keep warm in the Thermoserver.

     

    Add the garlic and onion to Closed lid"Closed lid" and chop 5 seconds at speed 5. Scrape down the sides of the Closed lid"Closed lid" with the spatula. 

    Add the olive oil and the sliced pepperoni and saute for 5 min, 120 degrees, speed 1. 

    Add salt and pepper to taste. Please be mindful of the salt as the salami and feta are both quite salty. Add the dried herbs, dried parsley, sugar, and crushed tomatoes and cook for 20 minutes, 100 degrees, Gentle stir setting"Gentle stir setting"

    Add the sliced capsicum and olives and cook for 10 minutes, 100 degrees, Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

    Add the feta and cook for 2 minutes, 100 degrees, Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

    Manually stir the sauce through the pasta until well mixed and serve with a green salad and fresh, crusty bread. Enjoy!

Tip

You can omit the feta but I find that it adds a lovely creaminess to the dish. Of course, fresh herbs can be used in place of dry. I've never cooked the pasta in the sauce but I can't see why it wouldn't work. If you try it, please let me know how you go!

    Doubled this, served over fettucine and left the olives out. Fed 7 people and everyone thought it was great. Served it with homemade garlic bread. Thanks for the recipe.

    Yum! I love this and it beats the salami pasta out of the edc, as I feel this isn't so heavy, as there is no cream tmrc_emoticons.)

    Hi PrincessMummy, I'm really pleased you enjoyed the dish. I personally haven't tried cooking the pasta in the sauce (old habits die hard) but I really can't see any reason why it wouldn't work. I'd probably use the butterfly to keep the pasta from getting churned up and mashed by the blades.

    This was lovely! I added the capsicum and olives at 10 minutes left rather than putting it on for the extra 10 minutes.

    I'll leave out the feta next time as I like to grate cheese on top of my pasta.

    I wonder if you can cook the pasta in with the sauce...
