Ingredients
Tomato and basil risotto with mascarpone
- 40 grams Parmesan cheese, crust removed, cut into pieces (3cm)
- 30 grams Small brown onion, peeled, halved
- 3 cloves garlic, peeled
- 40 grams Butter, cubed
- 40 grams olive oil
- 320 grams arborio rice
- 70 grams dry white wine
- 2 tbsp TM Vegetable stock paste
- 720 grams water
- 1-2 pinches salt, (to taste)
- 400 grams Ardmona chopped Tomatoes
- 1 bunch fresh basil leaves, shredded
- 125 grams marscapone cheese
- extra fresh basil leaves, shredded (optional)

1. Place parmesan cheese into mixing bowl and grate 10 sec/speed 10. Transfer into a bowl and set aside. Clean and dry mixing bowl.
2. Place onion and garlic into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
3. Add butter and olive oil and sauté 3 min/120˚C/speed 1.
4. Insert butterfly whisk. Add arborio rice and sauté 1 min/120˚C/"Counter-clockwise operation" /speed 1.5, without measuring cup.
5. Add wine and sauté 2 min/Varoma/"Counter-clockwise operation" /speed 1.5, without measuring cup. Scrape bottom of mixing bowl well with spatula to loosen rice
6. Add stock, salt and water and again scrape bottom of mixing bowl with spatula to loosen. Cook 13 min/100˚C/"Counter-clockwise operation" /speed 1.5, placing simmering basket instead of measuring cup onto mixing bowl lid.
7. Add chopped tomatoes and mascarpone and cook 1 min/100˚C/"Counter-clockwise operation" /speed "Gentle stir setting" .
7. Transfer into ThermoServer. Using the spatula, combine with shredded basil leaves and reserved parmesan and allow to sit for 5 mins. Add extra basil leaves (optional) and serve immediately.

Yum! The whole family enjoyed this. I didn't have marscarpone so just skipped this step but with the parmesan it was still tasty and delicious.
A family favourite in our house, so simple and easy. Sometimes I just add basil pesto if I don't have basil. I will also try it with some saute bacon as well. We love this!
