Ingredients

  • 1 red onion
  • 2 cloves garlic
  • 1 Capsicum
  • 1 tbsp smoked paprika
  • 60 g olive oil
  • 1 Chirozo Sausage sliced
  • 100 g prosciutto, Speck or Bacon shredded
  • 100 g chicken, Thigh roughly cubed
  • 4 chicken wing, ettes
  • 250 gAlborio Rice
  • 1 l chicken stock
  • Pinch of Saffron
  • 4 Muscles
  • 100 g Fish peices
  • 8 large Prawns, tail on
  • 2 cups of Fozen Peas
  • hand full of Parsely
  • hand full of Basil

Recipe's preparation

  1. Chop onion, garlic and capsicum for 2 seconds, speed 7, add paprika and olive oil.  Fry off at 100 C for 3mins, speed 1.

    Add sausage, prosciutto and chicken and seal at 100 C for 3mins, Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" .

    Add rice, stir through at 100 C for 2 mins,No counter-clockwise operation"No counter-clockwise operation" Gentle stir setting"Gentle stir setting" . Add stock and saffrona and cook at 100 C for 10mins, No counter-clockwise operation"No counter-clockwise operation" speed 1.

    Add seafood and peas cook at 100 C for another 5 mins No counter-clockwise operation"No counter-clockwise operation" , speed 1.

    Season with salt and pepper to taste.  Allow to rest in thermoServer for 5mins before serving.

    Garnish generously with fresh herbs and lemon wedges.

    Worked fine. I had to cook it a bit more because I had frozen seafood. On sitting, it firmed up. Tasted lovely.

    Not good. Way way way too much liquid. I ended up having to put in a heap more rice. Won't try this again.

    I made a risotto the other day and when it was finished, it was very soupy and I thought the same thing as you but once I poured it into the serving dish and let it rest for the 5 minutes as instructed (while i cleaned up). It was a really good consistency.

    I think if you try this next time, you will find the result to be much better.

    Far too much water in the recipe. It was very soupy and I had to increase the time after it was finished. However, then the chicken and fish were overcooked. Also normally paella has tomato in it which this doesn't. Maybe try it with 750ml of water??

    Tried Paella for the first time this week using another recipe with mixed results. The other recipe used the steaming basket and varoma to cook the various components and then mix all together in a bowl at the end.  Looking forward to trying this one as the flavours should develop more as everything is cooked together. Thanks for posting - always good to see something a little different.
