I'm cooking this todayRecipe's preparation
Ingredients:
1 small clove garlic
4 green/spring onions quartered20g olive oil
300g fresh tomatoes80g green or red pepper/capsicum
Red or green chili pepper to taste (I usually put in 1/3 including seeds)
25g fresh parsley
1 tsp white wine vinegar
Half a small lemon, juice only
3/4 tsp salt
Pepper to taste
Method:
Place garlic clove in TM bowl. 5 seconds, REVERSE, speed 4. REMOVE PEEL FROM TM BOWL.Add onion. Chop 5 seconds, speed 7.
Add oil. Saute 2 minutes, 100°, speed 2.
Add remaining ingredients. Lock the TM bowl. Pulse 2-4 times on TURBO. (To preferred consistency)
Scrape down TM bowl. Cook 10 minutes, VAROMA, speed 2.
Enjoy! Will keep for 2 days in the fridge...but it's too yummy to last that long!

Sometimes it's too sweet, too chunky, too spicy etc. And why is such a simple food rarely homemade and mostly purchased pre made, full of preservatives and additives?! Well, no longer will I be searching for the perfect salsa! I have an amazing recipe that is quick, simple and very tasty all made fresh in the Thermomix in a matter of minutes!

After reading the other comments here I decided to leave the TM off the lid and used the simmering basket on top where I cook it for the last 10 minutes to help it thicken up a bit. Seemed to help quite a bit
Today I made it for the second time. This time I substituted the parsley for coriander, I used reverse lowest speed for the cook time as I prefer a chunky Salsa for nachos. Again, the consistency very runny so I strained it (reserving the liquid for a soup), in future I will remove the tomato seeds to see if it changes the consistency.

I only blitzed it twice and it was a bit runny and minced up but I like a chunky salsa. Would probably just chop it in the TM next time Like others I used coriander and would use half the spring onions. THANKS!

Lovely taste, I found it a little runny though, maybe have blitzed it a bit too much? Added more chilli and used corriander instead of parsley.

A bit runny, may have been the fresh roma tomatoes that I used. Next time I would put on reverse and slowest speed for the cooking part. Note new TM will not be varoma but 120C.
This is the first thing my husband had a go at and we absolutely loved it. We blitzed it a few extra times and turned it into pasta sauce/soup as well. REALLY yummy!
Great Salsa Thanks! I didn't have the red pepper or the lemon & it was still really good. If I ever don't have lemon again I'll double the vinegar just to make it a little more piquant. I imagine that it tastes even better the 2nd day, I'll have to wait to find out because we ate it all tonight
