Preparation for 5 X 250g Jars
- 1 --- red onion, peeled
- 1 --- garlic clove, peeled
- 2 centimetre fresh ginger, washed
- 2 --- mangoes, about 500-600g
- 150 g white vinegar
- 350 g raw sugar
- 1 heaped teaspoons chilli, dried
- 1 heaped teaspoons ground cinnamon
- 1 level tsp ground turmeric
- 1 level tsp salt
- 1 level tsp mustard seed
- 2 level tsp molasses, (optional)
- 30 g dried cranberries, or sultana/ currants

- Place the onion, garlic and ginger into "Closed lid" on S6 for around 3-5 seconds.
- Place all other ingredients into the "Closed lid" set for Verona "Sous-vide" and "Counter-clockwise operation" on S2-2.5 "Sous-vide"
- Once Verona temperature has been reached set for 15 minutes
- Meanwhile prepare 5 X 250g jars
place Into oven set to 90c or in microwave with a little water in them for 2 minutes.
Remove water or take from oven a few minutes before the chutney is ready - to allow them to dry but not cool down. - Place chutney into hot jars and place on lids.
Put jars into sink and pour over some boiling water from the kettle / ZIP tap.
This helps to clean the outside and also sterilize the air pocket
