Recipe's preparation

    Cabernet Cranberry and Blueberry Sauce
  1. Combine all ingredients in the jugClosed lid"Closed lid" of TM5 or TM31.

    Set the time for 25 minutes, Varoma Temperature, Reverse Counter-clockwise operation"Counter-clockwise operation" and Speed softGentle stir setting"Gentle stir setting" .

     

    The sauce will triple in volume and the juices from the berries will release as the mixture boils and thickens.

     

    When cooked, transfer to sterilised jars. Allow sauce to cool at room temperature before refrigerating. Sauce will keep air tight in the fridge for 2 weeks or more.

     

    This sauce is like drinking wine and eating jam all in one, with texture, sweetness, tartness and juicy berries.

     

    Serve with roast meats, cheese and crackers, over icecream...the possibilities are endless!!! What a treat for Xmas!!

     

     

     

Tip

While this boils, the scent of the wine reducing with the cinnamon, cloves and berries is heavenly. The spices add flavour and their warming notes play off the wine.

Variations: You can also make this using blackberries, strawberries and rasberries....lovely!!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
