Ingredients

Relish

  • 1000 grams ripe tomatoes, quartered
  • 2 tablespoons salt
  • 500 grams brown onions, peeled and halved
  • 250 grams cooking apples, peeled, cored and quartered
  • 500 grams white vinegar
  • 400 grams white sugar
  • 90 grams sultanas
  • 1/4 cup plain flour
  • 1/2 tablespoon curry powder, or to taste
  • 1 tablespoon mustard powder, (or wholegrain mustard, if preferred)
  • 1 sprig rosemary leaves, (optional)

Recipe's preparation

  1. Put tomatoes into the steamer basket and sprinkle with the salt.  Leave overnight (or several hours) to drain.  I leave mine on the sink, so the juices can drain away, or leave it over a bowl.  

  2. Put onions and apples into mixing bowl and chop 5 seconds/speed 6.  

  3. Add drained tomatoes and chop for 5 seconds/speed 5.

  4. Add vinegar, sugar, sultanas and rosemary (if using) and mix on reverse for 3 seconds/speed 4.

  5. Remove MC and put steamer basket on lid.  Cook for 30 minutes/100 degrees/Reverse/Speed 1.5

  6. Mix flour, curry and mustard to a paste in a bowl or shaker with a little water and add to the mixing bowl through the hole in the lid while mixing on Reverse/speed 2.

  7. Cook further ten minutes at 120 degrees/Reverse/Speed 1.5

  8. Bottle into warmed sterilised jars and seal immediately.  

Tip

I sterilise my jars by boiling them for about 5 minutes in a large boiler, then putting them into a warm oven to dry.  It's optional, but I like to put my filled sealed jars back into the boiler, making sure the water comes at least halfway up the jars, and return to the boil for about 10 minutes.  This is known as a water bath, and will ensure a good vacuum seal.

An easy way to fill your jars is to put your thermomix lid onto the jar and fill through the hole - saves lots of spills.[[wysiwyg_imageupload:861:]]

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
