Recipe's preparation

    Method
  1. Soak Cashews for 2-3 hours covered in water prior to preparation. Drain water off before use.

    Put water into mixing bowl, heat on 100° for 5 minutes. Add the soaked cashews, lemon juice, nutritional yeast, tapioca flour and salt to the mixing bowl Closed lid"Closed lid"  with the hot water. Insert measuring cup and blend ingredients on speed 8 for 30 seconds. Then thicken the mixture for 4 minutes, 75° on speed 4. Remove into a bowl with spatula and use on pizza toppings, sandwiches, on top of pasta or in other recipes. 

    This makes a large bowl of cheese

This cheese can be stored in the fridge for approx. 2 weeks.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     I'm so impressed!! My son has a dairy allergy, so I've bought bio cheese in the past and it just tastes like plastic! This recipe is delicious and it actually melted into the pizza I just made! Thanks so much for sharing this will be a regular in our house!

    Sounds like a great alternative to dairy mozzarella - but can  any other nuts be used? Hubby allergic to cashews

    Yay! A great dairy-free alternative for cheese lovers! I had to blend mine an extra 30sec on speed nine to get it smooth and it tastes pretty yum. Thanks for sharing!
