  • 470 g Fresh Apricots, Weight after stones removed
  • 480 g sugar
  • 45 g lemon juice
  • 550 g water

  1. Place figs and apricots in mixing bowl and chop roughly 5 sec/speed 5
  2. Add sugar, water and lemon juice, place the simmering basket instead of the measuring cup on the mixing bowl lid and cook 45 minutes/Varoma/Speed 1
  3. Test the setting point of the jam. If necessary increase the cooking time by 5 - 10 minutes.
  4. Allow the jam to cool slightly before pouring into sterilized jars.
  5. Allow the jam to go cold before placing the lid tightly in position and storing in a cool, dry place. After opening store in the refrigerator.

Tip

To test the setting point of the jam, place a saucer in the freezer for 30 minutes. Place a teaspoon of the jam onto the saucer and return it to the freezer for 2 - 3 minutes. If the jam thickens and wrinkles when the saucer is tilted, the jam has reached setting point. If not continue to cook for 10 minutes and repeat until setting point is reached.
