Recipe's preparation

    Preparation.
  1. Place fig pulp and water into the mixing bowl and cook 7 min/100°C/speed 1, then blend 5 sec/speed 7. Scrape down sides of mixing bowl with spatula.
  2. Add lemon juice and sugar and blend 20 sec/speed 4. Scrape down sides of mixing bowl with spatula, then cook 70 min/100°C/speed 3, placing simmering basket instead of measuring cup onto mixing bowl lid.
  3. Check to see if the paste has set. If not, cook for a further 10 min/100°C/speed 3, placing simmering basket instead of measuring cup onto mixing bowl lid.
  4. Allow to cool slightly before pouring into sterilized jars (250g - 300g size). Allow to go cold before applying the lid. Store in a refrigerator.

Tip

Ideal as an alternative to quince paste served with cheese, especially soft cheeses both white and blue and also with cheddar, stilton, Wensleydale etc.

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
