Ingredients

Garlic & Herb Butter

  • 500 gram Pouring Cream
  • 1 level tbsp olive oil
  • 1 level tsp salt
  • 2 clove garlic
  • 1 heaped tablespoons Mixed Herbs

Recipe's preparation

  1. Add 500ml of cream to the mixing bowl
    Insert butterfly whisk
    Turn speed selector to speed 4 with measuring cup in the lid
    Run until butter and buttermilk separates (you’ll hear a change in the sound the machine is making, or remove the measuring cup to check)
    Remove butterfly whisk
    Drain buttermilk from the butter by pouring in to the simmering basket - make sure you keep the buttermilk to use to make bread, muffins, cakes, etc.
    Place butter back in to mixing bowl and add approx. 500ml chilled water, place lid on with measuring cup inserted, turn speed selector to 4 for 5 seconds to clean the butter
    Discard water by straining through simmering basket a second time
    Keep butter in simmering basket
    Add 2-3 garlic cloves to mixing bowl, add lid with measuring cup. Turn speed selector to speed 7 for 2 seconds
    Scrape down sides of measuring bowl, add butter, a heaped tbsp of mixed herbs or parsley, 1 tbsp olive oil and 1 tsp salt
    Place lid with measuring cup inserted and turn speed selector to 4 for 5 seconds.
    Place in a sterilised jar and store in the fridge.
    Enjoy!

Tip

Use parsley in place of mixed herbs if that's your preference.
