- 50 g Butter
- 50 g plain flour
- 500 g Milk

Chop cheese 3 sec/speed 8 then set aside.
Melt butter 2 mins/100/speed 2.
Return cheese to bowl and add all remaining ingredients. Cook 10 mins/90/speed 4.

Tip
Perfect over pasta, sprinkled with paprika. Also great with 50g Parmesan added in step 3.

I make this weekly. I don't melt the butter first. I add a big teaspoon on Dijon mustard. Grate the cheese then chuck the rest of the ingredients in. I use it mainly for cauliflower cheese. Great recipe.

Delicious! I halved the recipe to make a cauliflower cheese for three. Added a clove of chopped garlic to the butter (could chop first in TM) and a tsp of Dijon Mustard plus salt and fresh ground pepper to the mix. Gorgeous!
