  • 1 bunch Kale, stalks removed
  • 2 lemons, juiced, zest of one
  • 120 grams raw cashews
  • 1 teaspoon salt
  • 100 grams olive oil
  • 1 bunch basil, leaves picked
  • 1-2 cloves garlic

Recipe's preparation

  1. Blanch the kale in boiling water for 2 minutes.

  2. Drain, cool and add to Thermomix bowl (may need to chop for a few seconds on speed 7 or 8 to fit the lot in - I used curly kale and that takes up heaps of room!).

  3.  Add the remaining ingredients and blend for 10-20 seconds on speed 8 until it reaches the consistency you like.
