Apricot Jam
- 1000 grams Destoned apricots halved
- 250 grams sugar, to taste
- 1 Juice of a lemon

- Wash jars in warm soapy water. Sterilise by your chosen method.
- Wash, halve and destone apricots
- Weigh 1000gm of apricot halves into bowl. Add 250-400gm of sugar (to taste). Chop for 10 seconds on Speed 9
- Add juice of one lemon, mix for 5 seconds on Speed 5
- Cook for 40-60 mins on Varoma temp, Speed 2, with rice basket on top of the lid (no MC) or until setting point is reached.
- Pour hot jam into sterile jars, put lid on and tighten. You will hear the little button on the lid pop when it sucks in as the jam cools.

Tip
If boiling over occurs turn up the Speed to 3!
Older, squishy fruit will take longer to set than younger, greener fruit. Better to test after 40 mins than make concrete with 60mins!
I like it with less sugar than the average person so feel free to use less if that’s how you like it too.
Makes 2-3 jars
I have always sterilised my jars with boiling water. - Boil the kettle in the last 5 mins of the jam cooking. Pour boiled water into clean jars and lids, and let sit. When jam is ready, tip the boiled water out of the jars and fill them straight away with hot jam.
Store un-opened in the pantry for months. Store in the fridge once the seal is broken by opening.

super easy, very delicious. I used 1400gm apricots, 550gm sugar, 1.5 lemons and cooked on varoma speed 2 30 minutes, perfect.

My batch didn't gel either I used 1.1kg of apricots 300gm sugar large lemon. Cooked 40mins 100 speed 2.5 🤷🏼♀️
First Jam I've made
Thanks Kirrilly. I have moved into a house that has an apricot tree in the garden and not wanting the ripe apricots go to waste, I searched for a Jam recipe. Making jam was easier than I expected! Thanks also to Tracyk1870 https://www.recipecommunity.com.au/user/293050 as I used your cooking time recommendation which worked well.
So I played around with this recipe as first batch had burnt a little on the bottom. After 5 varying batches, reducing increasing speed and reducing time. I have come up with a solution that suits me, no burning or caramalization on the bottom. 1kg apricots - 250g sugar - juice of 1 lemon - Varoma 30min speed 2.

Great recipe used 1.1kg apricots 300g sugar speed 2 for 40 mins, burnt on the bottom. Hoping it didn't taint the jam. Will do lower temp next time.

Did this today. Speed 2.5 and towards the end down to 1. 300 grams of sugar for 1100 grams of apricots. Got 6 smallish jars from it. Soo easy!! I did mine for 35 mins. Thank you so much.
Made with 1.5 Apricot and 350g sugar, speed 2.5 and was perfect at 40mins in TM6. Thanks for sharing!
Made the jam this afternoon 😊 followed the recipe to a tee using 250 gms raw sugar . An amazing and simple recipe to follow .
The only catch is my jam caught in the bottom of the bowl 😟 . Anybody else have this problem and what can be done about it .
Would like to use this base recipe again .
