Ingredients

Mayo

  • 2 egg yolks
  • 4 tablespoons sugar
  • 2 teaspoon mustard powder
  • 4 teaspoons curry powder
  • 20 gram vinegar
  • 1 teaspoons Dijon mustard
  • 400 grams sunflower oil/ grapeseed oil
  • 2 egg whites
  • 1 pinch salt

Recipe's preparation

  1. Insert Butterfly

     

     

  2. Add all ingredients except egg whites,oil and salt to bowl.

     

     

  3. Mix 1 min 32 degrees speed 4

     

     

  4. Scrape down sides.

     

     

     

  5. With the blades spinning on speed 4, add oil in 100g incements to the top of the thermomix lid with the mc in place. This process should take a minimum of 4 mins.

     

     

  6. Scape down sides. The mayo should be very thick at this stage.

     

     

  7. With the blade spinning on speed 4 add egg whites and salt and mix for a futher 20 sec. Do not over mix at this stage or it could make the mayo flop

    I have made this mayo soooo many times now and it is delicious!!! Just the last batch I made, I didn't have anu dijon mustard, so I substituted with Apple cider vinegar! And turned out (i think and the husband) the best one yet!!! tmrc_emoticons.) thanks for the recipe!!!

    Do you happen to have a normal mayo recipe by any chance!? I've tried some others and they never turn out nice and thick tmrc_emoticons.(

    This is the best mayo ever!! I've already made it half a dozen times. Great on a sandwich and even great as a dressing for potato salad!!

    WOW this mayo  is soooo gooood. Easy to make. Had friends over for a bbq and everyone loved it even walked out with my second jar. Will make it again for sure.
