Ingredients

Curd

  • 8 lemons, you will need the peel of 4 lemons (use a vegetable peeler) and the juice of 8. If using limes you will need 12
  • 700 g sugar raw
  • 400 g unsalted butter cubed
  • 12 eggs

Recipe's preparation

  1. Place lemon peel and half of sugar into TM Bowl mix on speed 9 for 20 seconds

    Add remaining ingredients, mix on speed 6 for 5 seconds

    Set timer for 14 minutes, 90* temp and speed 4

    Time will vary depending on temperature of ingredients – basicly  - it will be thick and shiny looking (this indicates that it will set) if it has not thickened up, you need to give it more time at 90*/ speed 4 – another 2-3 minutes can make all the difference!!

    Pour into warm sterile jars.Seal  and keep in the fridge. Will keep for 6 months in the fridgeTry using limes or lime and passionfruit (add passionfruit pulp in after mixing on speed 6 and stir using reverse blade) lemon lime is nice too!!

    This makes approx 2 litres which is 8 x 250g jars

    I just love how much this makes! We have had Lime curd everything- it is especially good with icecream and jelly. I did find it a bit eggy, and next time will add more rind. Smile It has set perfect in the jars.

    Used 360 gms lime juice and only 11 eggs as they were all very large.
    excellent result 10 jars of lovely Lime Curd!

    Wow...yum is all I can say. Great recipe. Will be using this for a lemon meringue tart and to jar as gifts. Now to stop myself eating it off the spoon. Thanks for sharing.
