  • 2 tablespoon cornflour
  • 1/3 cup lime juice
  • 1/2 cup raw sugar
  • 1/2 Cup water
  • 40 g Butter
  • 2 egg yolks

Recipe's preparation

  1. Add to thermomix bowl: water, lime juice, sugar, GF flour and cornflour.


     


    Mix 100deg, 6min, sp 4 (until thickens). 


     


    Add butter, then turn onto speed 4 (no temp or time) and drop the egg yolks through the top one at a time so that they mix in. 


     


    All done!


     


     

Tip

I add liquids before flours in the first step, otherwise some flour can stick to bottom edges of the bowl and not mix through properly.

 

Also when adding the egg yolks, the mixture needs to be mixing because you don’t want the egg yolks to start cooking and have chunks of egg yolk through it.

The recipe is very tart. If you prefer you can remove some lime juice and add a little more water and/or sugar. 

Recipe can be doubled and used as a pie filling.

    So delicious & easy to make. I was given limes & this was a great way to use them. Doubled the recipe with no trouble at all.

    Made this today and it’s just perfect, nice spreadable consistency, prefect amount of tartness. I wasn’t sure on the tablespoon measure so went with uk 15ml tablespoon instead of aus 20ml tablespoon 👍
