I'm cooking this today

Recipe's preparation

    Mango Jam
  1. Put sugar and agar agar into TM bowl for 30 seconds on speed 9.

Peel mangos and chop all fruit off seed. Add mango and zest of 1 lemon to TM bowl.

Cook for 1 hour at 100 degrees. Speed may vary between soft and 2 - make sure liquid is always moving.

make sure MC is on sideways to let steam out but not spit everywhere.

After 1 hour cooking time, test to see if jam is ready - coat the back of the spatula with mix. It should set to jam consistency in the freezer in a minute or two

If not set yet, cook for a further 15 minutes or to your liking

Pour cooked jam mix into sterilised jars and seal lids tight. Allow to cool then store in cupboard or fridge

Tip

This jam is super yummy on freshly baked TM bread!!

I don't use any sugar, or add a ripe banana if the mangoes are a bit tart.

I had no Agar so I just used some natural pectin - half a green apple (with core) and it set fine. A bit on the sweetest side, so next time I think I would use less sugar and maybe add a couple of cloves just for a little spice. Otherwise, very nice!
