Ingredients

Roasted Capsicum, Parmesan and Nut Dip

  • 150 g Salted Cashews
  • 50 g pine nuts
  • 1 small piece garlic
  • 30 g Parmesan cheese
  • 2-3 red capsicums, deseeded & roasted
  • 1/2 bunch parsley
  • 20 g olive oil

    Method
  1. 1. Cut capsicum into quarters, deseed, and grill in the oven until the skin starts to blister and turn black. Place the capsicum directly into TM bowl with skin on.
    2. Place all other ingredients into TM bowl and turn the dial to speed 6 for 10-15 seconds with aid of the spatula.

    I'm thinking of roasting the garlic as well as the capsicum and adding sun dried tomatoes too

    Love this dip.  I BBQ the capsicum to get a great smokey flavour and skipped the pine nuts (as I did not have any).  Found the flavour was better with some lemon but that is personal taste.   Made this twice and will do again!!

    Awesome recipe even without the oil - substituted the pine nuts for feta cheese, skipped parsley and oil but added 10g of balsamic vinegar, turned out well.

    Delicious 

    I would like it a little cheesier so will add more Parmesan next time.
