  • 600 grams sweet potato cubed, - approx. 1 large
  • 125 grams Evoo, - Extra Virgin Olive Oil
  • 1 - 2 cloves garlic, - Depending on taste
  • 75 grams Cashews
  • 1 1/2 level teaspoons brown sugar
  • 1/2 level teaspoon turmeric
  • 1 level teaspoon mustard powder
  • 1 level teaspoon onion salt, Quirky Cooking
  • 5 sprigs fresh coriander
  • 125 grams water, - more or less depending on desired consistency
  • 2 level tablespoons Evoo, - Additional

Recipe's preparation

    Directions
  1. Preheat oven to 200 degrees C.

    1. Place garlic in bowl and blitz on turbo for 1 sec. Add oil and blitz for another second.
    2. Peel and chop potatoes approx. 3 - 5 cm cubed. Place on oven tray and brush with oil mix. Bake in the oven and bake on high for 10-15 mins to ensure it is cooked through and soft.
    3. Let the potatoes cool. Place in bowl with sugar, turmeric, mustard, coriander & salt (add if any remaining garlic & oil mix) and blitz for 2 seconds.
    4. Add cashews, additional oil & water and blitz on turbo for 1 – 2 seconds ( depending how chunky you like it )

     

     

    Serve with toasted Lebanese Bread.

     

    Lebanese Bread Directions

     

    Preheat oven to 200 degrees C.

    1. Mix ¼ cup olive oil, 1 glove garlic, on turbo for 2 seconds. Add 1 teaspoon sea salt flakes. Brush over Lebanese Bread. Cut into triangles and bake in oven for 15-20 min until lightly toasted.

    Easy to make. I found using turbo didn't chop some of the cashews. I ended up using speed 5 for a few seconds more. Also had a really strong flavour of olive oil, so I would use a light EVOO next time. Made double the amount pictured.
