Ingredients

  • 1 --- garlic, whole head/bulb large
  • 1 red capsicums, whole large
  • 5 long red chillies, whole fresh
  • 55 g extra virgin olive oil
  • 3 tsp cumin seeds
  • 3 tsp caraway seed
  • 100 g tomato passata
  • 1 tbsp tomato paste
  • 1 tbsp sea salt
  • 2 tsp caster sugar

Recipe's preparation

    Pre-heat oven to 160 degree Celcius
  1. place whole garlic bulb, chillies and capsicum into a baking dish - lightly coat the skins with oil. Roast for 30 mins.
    Place capsicum and chillies in a bowl and cover with cling film - allow to cool then peel and core the chillies and capsicum, scrape out most of the seeds from the chillies and all of the seeds from the capsicum.

  2. add cumin and caraway seeds to the mixing bowl.
    toast spices 3 mins/100°C/ speed 2
    then grind cumin caraway mix - 10 seconds speed 9
    Scrape down sides of mixing bowl.

  3. Cut cooked garlic bulb in half and squeeze roasted garlic into mixing bowl
    Add roasted capsicum and chillies/passata/tomato paste/salt/sugar/olive oil
    Blend for 2 mins/sp. 8 until desired consistency is reached.
    Store in an airtight container or glass jar and serve as needed.

Tip

A delicious spicy accompaniment for grilled meats, roasted veggies or salads.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
