Ingredients

Vegan Brazil Nut & Herb 'Not-Cheese'

  • 160 g Brazil Nuts
  • 1 clove garlic
  • 65 g freshly squeezed lemon juice
  • 70 g cold water
  • 40 g olive oil
  • 1 teaspoon salt
  • 2 tablespoons fresh thyme
  • 2 tablespoons fresh parsley
  • 1/2 teaspoon ground black pepper

Recipe's preparation

  1. Place a bowl on mixing bowl lid and weigh in brazil nuts. Remove bowl, cover nuts with cold water and place in the fridge for at least 6 hours, or overnight.

  2. Preheat oven to 160°C. Line a baking tray with an oven mat or baking paper and set aside.

  3. Place thyme, parsley and black pepper in mixing bowl and chop 3 sec/speed 7. Transfer into a bowl and set aside.

  4. Drain nuts through simmering basket and rinse well with cold water.

  5. Place nuts into mixing bowl and chop 20 sec/speed 6. Scrape down sides of mixing bowl with spatula.

  6. Add garlic, lemon juice, water, olive oil and salt. Blend 30sec/speed 6. Scrape down sides of mixing bowl with spatula. Repeat the blending step 5 or 6 times until mixture is smooth.

  7. Place a muslin or nut milk bag inside simmering basket over a bowl. Scrape mixture into muslin/nut milk bag and twist around the mixture to form a large ball. Squeeze hard to remove as much liquid as possible.

  8. Place chopped herbs on a plate. Unwrap the ball and roll it in the herbs to coat. Place on baking tray and bake for 30 minutes. Remove and leave to cool.

  9. Transfer 'not-cheese' ball to a platter and drizzle with olive oil to serve.

Tip

Use the liquid squeezed out of the ball as a salad dressing or a sauce for steamed vegetables.

If you don't have a muslin or nut milk bag you can use a clean tea towel.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
